| This coffee grows high in the Kintamani Highlands that surround the Genung Aging volcano (still active by the way — last erupted as recently as 2019!). This coffee was organically grown under shade trees (Erythrina, Albizia, Tangerine and Orange). The coffee is handpicked when fully ripe. Where this coffee is different from our Bali Blue Moon lies in the processing. This coffee is allowed to sun dry as a full natural on raised beds, before resting for a month and finally going through a dry mill to remove the dried fruit from the coffee seeds. The effect this process has on the coffee is due to the extended time the seed has in contact with the fruit, and the sugars in the pulp. In effect it is what gives this coffee the strawberry fruitiness, as well as the additional sweetness to go along with. | |
