What is cascara? Basically cascara is a byproduct of natural processed coffee. When you natural process coffee you dry the entire coffee fruit exactly as it came off the plant. The freshly picked coffee cherry is spread out on patios or raised beds and allowed to rapidly dry in the tropical sun. Once the coffee cherry has reached the desired moisture content it is sent to a Dry Mill. There they mechanically separate the coffee seeds from the surrounding dried skin and coffee pulp. At this point you have two products 1: naturally processed coffee beans ready to roast, and 2: cascara, ready to brew as it stands.
