The India Monsooned Malabar is a 100% Arabica coffee that is first wet processed before being aged for a year in open-air storage huts. This allows the humidity of the Indian monsoon season to saturate the coffee beans. The beans swell to twice their original size before the weather turns and the beans finish drying completely. This radically transforms the coffee--Where it was once light and bright it has now mellowed considerably along with gaining a great deal of complexity.
The coffee has an aroma of peanuts and caramel. It has a full syrupy body and a very gentle acidity. The flavor mirrors the aromas, nuts and caramel, but brings in an exotic, complex spiced note before fading to a lasting caramel finish.
